London – Guest speakers at LS:N Global’s Drinks Network Evening on 17 February included Addie Chinn, editor of The Boilermaker, the Gentleman’s journal of drink.
Chinn spoke about how consumers are increasingly as knowledgeable and discerning about what they drink as they are about food.
‘People used to go into a bar and vaguely say ‘I’d quite like a whiskey,’’ says Chinn. ‘Now people know the intricacies of what they are drinking and how it is made.’
Chinn also explained how two movements of cocktail making are converging.‘We are seeing a revivalist movement where bartenders are going back to practices from the dawn of the century,’ he says. ‘On the flip side there is a rise in barmen using centrifuges and advanced technology in processes that are laboratorial.’
