Paris – The ‘butchers to table’ concept has made its way to the French capital following the launch of Persillé, a butchers that also offers its customers gourmet fast food.
The brainchild of David Lebreton and Maxence DeWarren, Persillé is the first of its kind in Paris – a shop that provides quality cuts of meat along with a fast food service.
‘We want to offer our customers good-value meals with excellent meat and to change the codes of the fast food sector as the ingredients are not so good,’ Lebreton tells LS:N Global.
The responsibly and locally sourced menu includes burgers which vary each month: currently, it’s The Frenchy with camembert, mushroom sauce and grilled onions. Among Persillé’s other options are beef tartare, stew and a selection of sides..
