New York – Enlightenment Wines is sweetening nights out in New York with its new mead bar, Honey’s.

  • Honey’s consists of a mead-focused tasting room and a cocktail bar
  • The mixologists use mead prepared with foraged ingredients found in Upstate New York

Mixologist Arley Marks and meadery owner Raphael Lyon have opened a new bar in Brooklyn that offers a modern take on the historically popular drink, mead. All of the drinks are made from locally foraged ingredients, including apples, juniper and lavender, which are then fermented with honey and yeast.

The cocktails are complemented by a seasonal bar snack menu prepared by Marks, which features items such as brine-pickled vegetables. The space, which was formerly a repair shop, has been redesigned by Beasts of the Southern Wild set designer Jonathan Mosca using a muted palette of steel, cinder, concrete and wood.

Lyon’s meadery, Enlightenment Wines, will move its headquarters to join the newly opened Honey’s bar in Brooklyn’s up and coming Bushwick area.
