London – Under the bustling streets of Soho, diners in the know are feasting on seasonal produce and cocktails at the newly opened Coal Vaults restaurant.
Appropriately, Coal Vaults is located in a 19th-century coal storage basement. While the low lighting and brick walls may hint at another typical London restaurant, Coal Vaults differentiates itself from other eateries by creating seasonal menus for food and drink.
Making as much produce as possible in-house, including alcohol infusions, preserves and bread, the restaurant prepares small plates of food that are paired with specialist cocktails.
‘We want to promote cocktail-heavy dining and the drinks will have as much creativity as [the] menu,’ co-owner Martyn ‘Simo’ Simpson tells Hot Dinners. ‘The idea is to give the best quality cocktails without the attitude of the cocktail bartender.’
