12 : 08 : 2015 MoBa : Banh Mi : Boulangerie

London – The boulangerie meets bánh mì at MoBa, a dining experience that fuses French and Asian cuisine.

  • The menu unites two age-old cultures and their culinary practices
  • Traditional French breads, pastries and viennoiseries are paired with Vietnamese fillings

The Franco-Viet bakery serves a selection of freshly baked pastries with an Asian twist, such as its matcha green tea and mango croissants, and uses a continental staple in its bánh mì baguette sandwiches, filled with inspired ingredients including butter nut chicken and coriander duck confit.

‘MoBa is a way to present my French cultural background together with the Asian influences encountered throughout my travels in Southeast Asia,’ explains co-founder Theodore Charoy.

While recognising bánh mí’s French colonial origins, MoBa celebrates the evolution of Vietnamese bread and pastry by serving up the two cultures side-by-side.

The Big Picture: More than ever, we are witnessing a blending of cultures to cater to the tastes of the Bricolage consumer. To find out more, book your place at Beyond Borders, our Autumn/Winter 2015 Trend Briefing.
