London – Opened last week, The Palomar brings the modern flavours of Jerusalem to Soho.
The Palomar owners Layo and Zoe Paskin worked with Asaf Granit, Yossi Elad and Uri Navon, chefs from acclaimed Jerusalem restaurant Machneyuda, to create a menu that celebrates the heritage of the city, but with a modern twist. The menu is a blend of cultures found in Jerusalem, including influences from southern Spain and Italy, North Africa and the Levant.
We have seen a resurgence of Jewish and Israeli food in New York, where there is a large Jewish population, but other than Yotam Ottolenghi’s empire, the Israeli cuisine scene in London has remained relatively quiet. The Palomar adds to the noise and fits in with the current cultural desire to eat lighter, fresher, more vegetable-based meals. The menu’s signature dish is vegetarian – a polenta with an asparagus and mushroom ragout – and also features small mezze-style dishes to share.
