As the paleo diet becomes mainstream, consumers are increasingly looking to ancient traditions to inform their eating habits, a fact we witnessed with the rapid rise of stock being rebranded as bone broth. The ancient Hindu system of medicine, Ayurveda, is also having an influence on ingredients and new products.
‘We are now being told that the food our grandparents ate wasn’t so bad after all,’ says Jody Vassallo, author of Beautiful Food and consultant to Jamie Oliver’s Ministry of Food. ‘As a result, people are looking to traditional ideas that have withstood the test of time.’
