Amsterdam – SLA is a new salad bar restaurant in the trendy Amsterdam neighbourhood of De Pijp, where customers can not only buy organic salads, but attend workshops and talks at the adjoining SLA Lab to learn about wholesome food.
Co-founder Nina Pierson was inspired by the proliferation of juice and salad bars in New York and London, and sought to bring a similar concept to Amsterdam, where there is a dearth of health food restaurants. SLA – which means lettuce in Dutch – sells organic, locally sourced, in-season produce. But beyond just providing Amsterdammers with green nourishment, the Lab section of the restaurant seeks to educate them about how to eat more healthily.
