Seattle – CityLab7, an interdisciplinary collective specialising in food and ecosystem design in urban spaces, has created an installation called the [storefront] Mushroom Farm, which grows edible mushrooms in a pop-up café.
The mushrooms are grown from the used beans from local cafés. The farm is expected to yield more than 200 pounds of oyster mushrooms, which will be donated to programmes that feed local families.
This is a great way for a sustainable project to benefit a local community through a convivial space.
