London – The city’s first fine dining establishment dedicated to gluten-free food has opened in Victoria.

Having previously opened as part of the multi-dining room space M Victoria Street in January 2016, M Raw has transformed its original menu offer of raw sushi to offer gluten-free food with ingredients worthy of a Michelin-starred establishment.

The menu features fish that has been caught using the Japanese ikejime method, which is considered one of the most humane ways to kill a fish. Fine ingredients such as wagyu beef sit alongside gluten-free alternatives such as buckwheat tacos, flaxseed crackers and tempura fried in a black rice flour.

‘More restaurants than ever before are offering gluten-free dishes on their menus. But few are offering a total menu,’ says Martin Williams, owner of M Victoria Street. ‘Not only does Raw do just that but it also offers dishes that are of the finest quality.’

M Raw highlights how the free-from market is evolving. As gluten-free enters the mainstream, consumers will increasingly look for high-quality ingredients and restaurant experiences.
