New York – A new eatery in Union Square puts street food on restaurant tables. Moving away from the city’s ubiquitous hot dog carts, Dogmatic serves up gourmet sausages inspired by those seen on the founders’ travels through Europe.
While trekking on the continent, according to company lore, founders Andrew Deitchman and Heather Baltz saw street vendors grilling sausages then sandwiching them in slices of artisanal bread toasted on spikes. Deitchman and Baltz brought the idea back to the US, sourcing meats and other ingredients from local and organic suppliers.
The restaurant interior, meanwhile, designed by New York-based EFGH, echoes the food’s meaty past by featuring aesthetic winks to a traditional butcher’s shop, such as the hefty butcher’s block table that takes pride of place.
