All fired up: New restaurant goes back to basics

Sweden – A new Stockholm restaurant, Ekstedt, is taking cooking back to its origins by preparing all of its dishes over an open fire.

The restaurant, created by Swedish chefs Niklas Ekstedt and Gustav Otterberg, aims to revive traditional cooking methods and turn the cooking process into an art form by using an open fire.

The use of Scandinavian wood as fuel adds a unique flavour and essence to the food at Ekstedt that cannot be found anywhere else in the world. With its décor a mixture of sandstone from Jämtland, northern Sweden, and timber from the south, the restaurant offers a natural and back-to-basics experience.
