New York – Brooklyn bar Yours Sincerely serves its pre-batch cocktails straight from the tap to offer customers a more consistent drinking experience.

  • The concept is inspired by mixologist Ryan Chetiyawardana’s Dandelyan bar in London

At Yours Sincerely there is no pageantry, no bottles arching through the air and no sound of crushed ice rattling around tumblers. Here every cocktail is served ready-made from one of more than 20 taps behind its marble-topped bar.

Keeping cocktails at their best for days at a time is no easy feat, say co-founders Julian Mohamed and Darren Grenia. For more than two years the pair experimented in Grenia’s basement with how to maintain freshness, substitute perishables and configure the draught system so that the cocktails would taste the same from first to last.

‘It’s about creating consistency – building cocktails one at a time will always be subject to variables that affect consistency: a heavy-handed bartender versus a cautious one, the size of the ice cubes, or the temperature in the bar,’ says Grenia. ‘Batching minimises these variables so guests can expect the perfect drink every time.’

The Big Picture

Cocktails aren’t the only drinks receiving the tap treatment. From New York to Philadelphia, more bars are serving wine as well as beers on tap for a more Whole-Chain approach to imbibing.
