Eindhoven – As part of Dutch Design Week, food curators Lucas Mullié and Digna Kosse are presenting The Foodconvertors project, a series of machines that use the logic of the factory to create home-made dishes.
The project is installed in an empty workshop where the C-Fabriek collective creates ‘production lines for the new factory’. The Foodconvertors project combines the concepts of food preparation and preservation. ‘The idea behind it is that you can use time as an ingredient for a dish that you want to prepare,’ Kosse tells LS:N Global.
The installation includes three converters: the Herbal Filter uses a clock-like mechanism to create flavoursome infusions, the Cyclical Rumtopf optimises the flavour exchange between fruit and rum, and the Food Membranes create dishes with dissolving layers to indicate when they are ready.
