Copenhagen – Danish architect firm 3XN has transformed a listed building in the city into an experimental food laboratory for restaurant Noma.
Restrictions placed on the building prevented the architects from nailing or fixing anything to the walls or floor of the interior, so the space has free-standing storage cabinets that divide the area into an office, a laboratory, a staff area and a herb garden on wheels.
