Grass-fed: Shipping container café adopts a holistic approach

24 : 09 : 2014 Flexitarianism : Till The Cows Come Home : Berlin

Berlin – Till the Cows Come Home doesn’t sound like the name of a vegan and vegetarian eatery, but it is just that.

Located in a shipping container in the cool Mitte district, the café is a proponent of slow food instead of the fast food tofu burgers that Berliners are used to. As an alternative, co-founder and creative director Natalie Viaux worked with health consultant Dr Christiane Cordes and chef Nuno Carrusca to create a menu inspired by macrobiotic, Ayurvedic, kosher and Mediterranean ingredients.

For Viaux, the menu is about showing that healthy food does not have to be boring, but should be fresh, vibrant and delicious. Till The Cows Come Home is a café for meat-eaters as much as for vegans. ‘We want to be a new experience showing that a vegan or vegetarian lifestyle is not all about abstinence, but creativity,’ Viaux told A Brand New Love, ‘We are speaking to people that are already living a vegan and vegetarian lifestyle just as much as to people that still have fish and meat in their daily diets.’

As consumers wade through The Polarity Paradox and swing from extreme to extreme they are searching for balance through their lives, and many are doing this through their diets. For more, read about the increasingly common Flexitarian lifestyle in which consumers are choosing vegetables over meat.
