Concept dining: Restaurant changes menu and interior with chefs

Madrid – Nothing is permanent, not even restaurants these days. At The Table at the Urso Hotel & Spa, guest chefs bring their own restaurant concept and menu to the space, which changes every month.

At present, the restaurant is being run by Jesús Sánchez from the Michelin-starred El Cenador de Amós near Santander. From 1 to 23 December he will bring his Cantabrian cuisine to Madrid. 

Not only does the menu change, but so does the interior design to reflect the style of the chef and the ambience that his food evokes – if only for a few weeks. Throughout the year six chefs will take over The Table and inject it with their own flavours and points of view. 

While pop-up restaurants are nothing new, an entire restaurant revolving around the concept is an interesting one. The idea of redesigning the interiors to complement the food reminds us of Jason Atherton’s Shanghai restaurant, The Commune Social, where each course is served in a different room with a different design to match.
